About Driving the beverage program at Cordis, Hong Kong for Langham Hospitality Group. Billy was born in the city, but spent his early years in Europe, honing his skills and finesse at various bars and clubs around the industry. After almost a decade, he moved back to Asia to reconnect with his roots. His love for art led him to the Le Comptoir Group, working with the Global Champion MIXLDN Timothy Ching, blurring the line between cocktail and art in the fine dining venue Bibo. Since then, he has moved on to open various venues such as Djapa, Hong Kong's first Nipo-Brasileiro whisky bar, to more recently, Gishiki Lounge, the sister bar to the Sushi Zo Group, with Michelin starred venues reaching all around the world. As a certified BIlAB whiskey ambassador and brand ambassador for Copenhagen Distillery, he continues to bring his beverage philosophy, educating and sharing his passion through guest shift appearances, and guest speakers in masterclasses.
